Ukrainian food doesn't usually get too crazy, but there are a couple things that are kind of festive, cultural foods that they enjoy that might be a little bit unusual. One is called holodets, and it is essentially a meat jello. So instead of maybe having a like a fruity flavor in gelatin, it's instead made with meat fat and has meat chunks in it, and it's usually eaten for New Year's and is kind of special. They also will occasionally for holidays eat something called sala, which is raw pig fat, and they'll usually eat it with horseradish and crackers. Sala is not as scary as it seems, but holodets is a little bit more adventurous for sure.
