I think the craziest food that I ever ate in Taiwan is it's called a xie zhu gao which is pig's blood cake. So what it is, it's just rice and then the blood of a pig and you just mix it together and it's in like a little stick and it's actually really really common. You eat it in most huoguo which is hot pot, which is something you eat almost all the time in the winter and it's super super common but they really believe it's the best thing for you and you chew it it's like really like sticky and everybody there loves it so if you ever want some pig's blood cake go to Taiwan.

A really common thing to eat in Taiwan is called Ji Jiao, which is chicken feet. And from what I understand, they just grill it. I'm not a fan, but it's very common to be served that. And they get a kick out of having foreigners eat it, or try it.

If you don't try the stinky tofu, you haven't embraced the culture and you don't love the people. It smells like an open sewer, but you still have to eat it. And if you tell people that you've eaten it, then they love you for life. It normally is served with the traditional side of pig intestine soup and congealed pig's blood. I never really loved the intestine, but the pig's blood is actually quite good.
