The craziest food I have is what's known as vieux fromage, which is from the island of Corsica, and they say it's ripe when there's maggots crawling out of it, and the way to eat it is normally you take a very small little fleck off the round and you eat it with jelly to sort of neutralize the super pungent overpowering flavor, and I was training and my companion, it was one of the first cheeses he tried in France, and yeah, poor him. But no, cheese is really amazing. There's so many good different types of cheese. There's well over 300 different types of cheese in France and Switzerland.
One of the craziest foods that I ever had is called foie gras. It's something that you've never heard about here. It stands for fat liver and essentially what they do is they just completely stuff a goose. They just overfeed it, overfeed it until its liver becomes diseased and the goose dies and then they take this diseased liver and they like they harvest it and I don't really know all the details but they pretty much turn it into a spread for bread and it sounds absolutely nuts, totally crazy, but when it's prepared homemade, not from the market, it's actually quite delicious and it's so weird. Foie gras, whack.
In France, one thing you got to know about Christmas time is for crazy food is we love to eat seafood all the time.
The craziest food was caviar, and I actually really didn't like it. It was way too salty. But I never got to eat escargot. Another one that was pretty crazy was foie gras, goose liver, and I really didn't like that either, but a lot of people do. They think it's really great, so at least try it and you might really like it. Another food that's not crazy, but it's crazy good is called raclette. It's where you put cheese over potatoes and meat and things like that, and it's a pretty popular dish in the Eastern area, but if you get a chance to try it, it's definitely worth it.
Some of the crazy foods of France would have to definitely be escargot, which is snail. It's actually pretty good when done right, and as well there's frog legs. They do actually eat those, but that's not that bad either. It just tastes like chicken, just a little bit different.
